Slow Roasted Lamb with a Caramelised Balsamic Glaze

Everyone I speak to is talking about roasts - the weather is chillier and the craving of slow cooked, melt in the mouth, fall apart roasts is perfect to kick start these colder months. This is a beauty - if you can find the special caramelised balsamic vinegar you will love having it in the cupboard for salads etc too- it is delicious. Otherwise simply use the best balsamic you have and a sprinkle of brown sugar.
