In the fare exchange section of Gourmet Traveller, this wonderful canape is by the resaurant Xanthi.
Preserved lemon stirred through mayonnaise, spread on top of a crunchy toast, topped with tomatoes and pickled fennel with fresh herbs, and those beautiful white anchovies aka boquerones in Spain.
So much going on in one little bite!
