We all choose our favourite jam or marmalade so everyone is happy.
This is the simple recipe by Donna Hay : - Mix 1 cup (160g) buckwheat flour 3/4 cup (90g) almond meal, 1/2 cup (125ml) maple syrup (or any combo with rice malt syrup, golden syrup, honey). 1/3 cup (80ml) light-flavoured extra virgin olive oil. Roll into balls, drop in 1 tsp jam per cookie after making a little divet in each. Makes 16. Bake 180C on paper lined tray 20 minutes.
