Sri Lankan Sweet Potato and Snapper Curry
Based on a dish from the Flying Fish restaurant by Sri Lankan owner Peter Kuruvita, this is a version for the home cook.
It has a great serving approach where the fish is pan-fried separately therefore the curry can be served on it's own for vegetarians or with grilled chicken for those who prefer it. Is a great dinner party main for being so versatile with tastebuds.
